Red, white and yellow?

I know, I know...it is supposed to be red, white and blue for the Fourth of July.

But as I was perusing through the many food blogs that I follow, I came across a post about grilled fruit skewers and I knew I had to try them.  I would love to give that blogger credit, but unfortunately after extensive searching, I could not find the recipe again.

Good news, this one won't melt in the rain.  If you are scratching your head right now and don't know what I am talking about, click here for some classic old song lyrics lamenting a cake in the park, ruined by the rain.

Back to the skewers.  I had the red.  Fresh strawberries that are wonderfully in season right now.

And I had the white.  Well, that is if you allow me a little artistic license.

But sadly pineapples don't come in blue.  I really wanted to try grilling them so in a very unpatriotic gesture (I'm Canadian anyhow), I sacrificed the traditional colors in favor of taste.

I cut up the fruit and managed to save enough to actually use.  It was so refreshingly good that a few, many pieces ended up in my mouth.

I made a sauce out of honey, thinned down with banana flavored rum.  Hey, what can I say? Those were the ingredients available.  And a chef always makes do with the available resources.

The fruit was lined up on the skewers, brushed with the sweet marinade and placed on the grill.

The edges of the pineapples caramelized beautifully, and they were the star (and stripes, ha ha) of the dish.  It was definitely a unique and fun way to serve dessert, and I look forward to trying other fruit on the grill.  Maybe next time I can do a better job of keeping to the traditional holiday colors.  Anyone interested in black grapes and orange slices for Halloween?

Lastly, it wouldn't be the Fourth of July without fireworks!  Enjoy!
